Dublin’s Fair City a Fairtrade City! Dublin was awarded Fairtrade Capital City status on Wednesday 20th February 2008 by Fairtrade Mark Ireland, just two years after Dublin City Council signed a resolution to support Fairtrade. A Fairtrade Steering Committee of Dublin City Council Councillors and staff, community organisations from Dublin Community Forum and Dublin City Development Board drove the initiative. Staff in Dublin City Council‘s five administrative area offices promoted the initiative in the community. Schools and businesses have also been instrumental in ensuring Dublin City achieve the goals required to become a Fairtrade City. Trinity College is Dublin City’s Fairtrade Flagship Business, with over 20,000 people having the opportunity to buy Fairtrade products in the college each day. At least 120 retailers and 60 catering companies have signed up to sell Fairtrade products and the citizens of Dublin are ensuring this number is increasing all the time, because they ask for and support FAIRTRADE Mark products. FAIRTRADE Christmas Cake Recipe This alternative to buying or making an ordinary Christmas cake is just packed with lots of FAIRTRADE Mark ingredients.
Think FAIRTRADE for Christmas!
Ingredients: 250g/9oz 1½tsp ½tsp ¼tsp 50g/1¾oz 350g/12oz
self‐raising flour FAIRTRADE mixed spice FAIRTRADE ground cinnamon FAIRTRADE ground cloves FAIRTRADE ground almonds Of each FAIRTRADE raisins, FAIRTRADE currants and FAIRTRADE sultanas 50g/1¾oz Mixed peel 50g/1¾oz FAIRTRADE dried apricots, chopped 50g/1¾oz walnuts, roughly chopped 50g/1¾oz whole (unblanched) almonds, roughly chopped 250g/9oz unsalted butter, softened 200g/7oz FAIRTRADE dark sugar 1 the juice and grated zest of 1 lemon 5 large free‐range eggs 100ml/3½fl oz brandy (plus extra for 'feeding') or you can use FAIR‐ TRADE Rum Method: 1. Preheat the oven to 150C/300F/Gas 2. 2. Sift the flour, spices and almonds into a bowl, then add the rai‐ sins, currants, sultanas, mixed peel, dried apricots, nuts and a pinch of salt. Stir thoroughly. In a separate bowl, cream the but‐ ter, sugar and lemon zest until fluffy, then beat in the eggs, one by one, adding a teaspoon of the flour mixture with each egg. Stir the egg mixture into the flour mixture with the lemon juice and brandy. 3. Spoon into the prepared tin. Level the top and bake for two hours. Very loosely cover with a sheet of greaseproof paper and continue to bake for another one hour, making three hours in total, but test for readiness after two‐and‐three‐quarter hours' cooking. The cake is cooked when a skewer inserted into the middle comes out clean and the sides have begun to shrink from the edges of the tin. 4. Remove to a wire rack. Once completely cold, wrap in foil and store in an airtight container until Christmas, removing every two weeks to 'feed': unwrap, prick the top with a long skewer and spoon over one to two tablespoons brandy. Reseal as be‐ fore.
