Chai 2cm piece of fresh ginger 1 cinnamon stick 1 bay leaf 1 tsp cardamom seeds 1 tsp black peppercorns ½ tsp fennel seeds 5 whole cloves 3 cups of water Bring all of the above to a boil and then reduce heat to low and simmer for 5 mins. Then add ¼ cup black tea leaves and set aside for 5 minutes. Strain the tea and reheat with ½ cup of milk. Sweeten with brown sugar or honey.
