PART A: READING (15 MARKS) Read the text below and answer all the questions. I
Last year, the Health Ministry of Malaysia conducted a study on Malaysians' dietary habits. This study was carried out due to the government's concern with the rise of heart disease patients in the country. The results of the study showed that Malaysians have poor eating habits. In addition, the findings revealed that most Malaysians do not like to eat fish. However, it is advisable
5
that we consume fish at least twice a week.
II
There are several reasons why Malaysians need to eat fish. Firstly, all types of fish contain an enzyme called the Omega 3 fatty acids. Many health research reported that they are important especially for blood vessels and blood pressure. These acids also keep our skin youthful and smooth.
10
Secondly, people who eat large quantities offish are known to have low risk of heart attacks.
This is because fish is low in fat and therefore good for
maintaining a healthy weight that in turn may avoid heart attacks. Thirdly, it may also prevent cancer, age-related blindness, arthritis and gum diseases. Fourthly, eating fish also could help prevent stroke in diabetic patients.
15
Finally, eating fish helps keep bones healthy and strong. This is because fish contains calcium, which is important for women as they are usually at risk of osteoporosis (a bone-thinning disease) especially after menopause.
III
As we now know why it is important to include fish in our daily diet, it is also important to know how to pick a fish. The easiest place to do so is at the supermarket.
They always ensure that the fish is well stored.
20
It is also
easier to pick a fish from a supermarket because it is often labelled for easy identification. When shopping for fish, remember not to take fish from the display freezer as it is only cold at the back and not too cold in the front. Therefore it is not kept fresh. You also need to smell the fish first. If you feel
25
it is too fishy for your liking then it is not good enough. Remember to look at the fish eyes. It should be red, fresh looking and most importantly clear. If the eye is cloudy then it is not fresh.
Another way is to touch the fish. It
should be firm and shiny. The skin should also be smooth and not sticky. A <E> Hak Cipta Universiti Teknologi MARA

sticky fish is not fresh. The last step is to look at the gills. They should look 30 freshly red. Brown gills indicate that the fish is not fresh.
IV The healthiest ways to cook fish is to steam, grill, barbecue, bake or microwave them. It is fine to cook fish in small amount of oil such as olive, canola or peanut oil. However, deep fried fish is very high in fat and is soaked in oil. It therefore kills all necessary minerals and Omega3 fats in the 35 fish. It is pointless to fry the fish and expect it to be nutritious. The same goes for fish served with rich creamy sauces. It is wise to use herbs and spices to get rid of the fishy smell. Another age old tradition is to use lemon when cleaning the fish. It helps to reduce the smell. Finally, enjoy your fish.
