To Bake the Bread 1. There will be about 1 cup remaining after the above steps, perhaps a little more. To this add ⅔ cup oil, 2 cups flour, 1 cup sugar, 1¼ tsp baking powder, ½ tsp salt, ½ tsp baking soda, 3 eggs, ½ tsp cinnamon and ½ tsp vanilla. Then add about ½ cup of any other desired ingredients. 2. Pour into two well-greased and floured loaf pans. You may grease and sugar the pans instead, though the loaves may stick. You may also use a bundt pan. 3. Bake at 350°F for 50–60 minutes, or until the loaves are done. A toothpick can be used to check for doneness. 4. Allow the loaves to cool for 10 minutes before removing them from the pans.
To Bake Muffins 1. Mix the ingredients as you would to make bread, following step 1 above. 2. Pour the mix into one or more greased and floured muffin pans. It should yield about 24 muffins. 3. Bake at 350°F for 20–25 minutes, or until done.
