MEAT INSPECTION.—Lectures and practical instruction in the laboratories and at the abattoirs, on the general principles governing inspection of meat, and on the physical and chemical properties of the meat of various animals used for food; trade terms and usage; the quality of meat, noxious and injurious meat; the differential diagnosis of the various diseases which render meat unwholesome or unfit for food purposes; parasitic diseases communicable to man and other animals; food poisoning; systems of meat inspection—home and foreign; meat preservation—cold storage and canning. General Veterinary Surgery embraces operative technique and general surgery, and includes demonstrations and exercises in casting, general restraint, anaesthesia, examination of horses for soundness, and clinical instruction. Operative Veterinary Surgery includes clinical veterinary surgery, dentistry and ophthalmology. Each student, under supervision, performs operations and carries out post-operative treatment of surgical cases occurring in the Veterinary Hospital.
